Switch works well. You can also wire in a logging status light.
Assuming the navigator has a pre-start workflow to get the TSD computer up and running as well as other tasks, you can make logging start/stop a part of that process.

I potted a LM19 temperature sensor into a VDO brass case for temp sensors. The LM19 is ~$1 each at Digikey and the VDO sensor is ~$9 or so.
