sensor advice please.

I am fitting a Dash 2 and DL1 in a race car.
Can i use 2 pin sensors and how would i wire this ?
The manual is very vague as to what you need to do.
I have water temp, oil temp, air temp and oil pressure to connect.
I am using the OE water sensor for a FD3S RX7
a Echlin Audi A4 temp sender 149 - 229 ohm for oil temp
a OE VW VR6 air temp sensor.
a RB30 oil pressure switch 0 - 8 bar
will these be ok or must i get specific sensors ?
